Ingredients:
2 cans chickpeas, drained and rinsed
1 large sweet potato, peeled and cubed
1 onion, diced
1 can diced tomatoes
4 cups vegetable broth
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp turmeric
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Combine Ingredients
Add chickpeas, sweet potato, onion, tomatoes, broth, cumin, cinnamon, turmeric, salt, and pepper to the crockpot. Stir to combine.Cook
Cook on low for 6-8 hours or high for 4-5 hours until the sweet potatoes are tender.Serve
Garnish with fresh cilantro and serve with warm flatbread.
