Moroccan Chickpea Stew

If you’re looking for something a little different, this Moroccan Chickpea Stew is a flavorful change of pace. With warm spices like cumin, cinnamon, and turmeric, it’s a healthy, vibrant stew that’s perfect for chilly fall days.

Ingredients:

  • 2 cans chickpeas, drained and rinsed

  • 1 large sweet potato, peeled and cubed

  • 1 onion, diced

  • 1 can diced tomatoes

  • 4 cups vegetable broth

  • 1 tsp cumin

  • 1/2 tsp cinnamon

  • 1/2 tsp turmeric

  • Salt and pepper to taste

  • Fresh cilantro for garnish

Instructions:

  1. Combine Ingredients
    Add chickpeas, sweet potato, onion, tomatoes, broth, cumin, cinnamon, turmeric, salt, and pepper to the crockpot. Stir to combine.

  2. Cook
    Cook on low for 6-8 hours or high for 4-5 hours until the sweet potatoes are tender.

  3. Serve
    Garnish with fresh cilantro and serve with warm flatbread.
