Servings: 12 cups
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes
Ingredients:
2 cups elbow macaroni (or any small pasta)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups milk
2 cups shredded cheddar cheese (plus extra for topping)
1/4 cup grated Parmesan cheese
1 large egg, beaten
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup breadcrumbs (optional, for topping)
Cooking spray or additional butter for greasing the muffin tin
Instructions:
Cook the Pasta: Preheat your oven to 375°F (190°C). Cook the macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, until slightly browned, to form a roux. Slowly whisk in the milk, continuing to whisk until the mixture is smooth and begins to thicken, about 3-4 minutes.
Add the Cheese: Remove the saucepan from heat and stir in the shredded cheddar and Parmesan cheese until melted and smooth. Season with garlic powder, onion powder, salt, and pepper. Let the cheese sauce cool slightly, then stir in the beaten egg until fully incorporated.
Combine Pasta and Sauce: Pour the cheese sauce over the cooked pasta and stir until the pasta is well coated.
Prepare the Muffin Tin: Grease a 12-cup muffin tin with cooking spray or butter.
Fill the Muffin Cups: Spoon the macaroni and cheese mixture into the prepared muffin cups, filling each one to the top. Press down gently to compact the mixture.
Optional Toppings: If desired, sprinkle extra shredded cheese and breadcrumbs on top of each cup for a crispy topping.
Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the cups are set.
Cool and Serve: Let the macaroni and cheese cups cool in the tin for 5 minutes before carefully removing them with a spoon or knife. Serve warm.
Tips:
Add-Ins: Customize these cups with add-ins for extra flavor and nutrition.
Cheese Varieties: Experiment with different cheese blends, such as Gouda, Gruyère, or mozzarella, for a unique twist.
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
These Macaroni and Cheese Cups are a fun and portable way to enjoy classic mac and cheese. They’re perfect for kids' lunches, parties, or as a comforting snack anytime!
