Chicken Tortilla Soup

This zesty Chicken Tortilla Soup is a perfect blend of southwestern flavors, slow-cooked to perfection. Packed with shredded chicken, beans, corn, and a hint of spice, it’s an easy weeknight meal that’s sure to please everyone.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 can black beans, drained and rinsed

  • 1 can corn, drained

  • 1 can diced tomatoes

  • 4 cups chicken broth

  • 1 packet taco seasoning

  • 2 garlic cloves, minced

  • Tortilla strips, avocado, and sour cream for garnish

Instructions:

  1. Combine Ingredients
    Add chicken, black beans, corn, tomatoes, broth, taco seasoning, and garlic to the crockpot.

  2. Cook
    Cook on low for 6-8 hours or high for 4-5 hours.

  3. Shred Chicken
    Remove the chicken, shred with a fork, and return to the crockpot.

  4. Serve
    Ladle into bowls and top with tortilla strips, avocado slices, and a dollop of sour cream.
