Beef and Barley Stew

This Beef and Barley Stew is the ultimate comfort food for fall. The slow-cooked beef becomes so tender it practically melts in your mouth, and the barley adds a satisfying, chewy texture. It’s the perfect meal for those nights when you want something cozy and filling.

Ingredients:

  • 1 lb beef stew meat, cubed

  • 1 cup pearl barley

  • 3 carrots, sliced

  • 2 potatoes, peeled and diced

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • 4 cups beef broth

  • 1 tsp dried thyme

  • Salt and pepper to taste

  • 1 tbsp olive oil

Instructions:

  1. Brown the Beef
    In a skillet, heat olive oil and brown the beef cubes on all sides, then transfer to the crockpot.

  2. Combine Ingredients
    Add the barley, carrots, potatoes, onion, garlic, beef broth, thyme, salt, and pepper.

  3. Cook
    Cook on low for 8-9 hours or high for 5-6 hours until the beef is tender and the barley is fully cooked.

  4. Serve
    Ladle into bowls and enjoy the hearty flavors.
