Vegetarian Lentil Soup

This Vegetarian Lentil Soup is a fall favorite, packed with wholesome lentils, sweet potatoes, and fall veggies. It's hearty, healthy, and so satisfying. Plus, the slow cooker brings out all the deep flavors, making it perfect for meal prepping or freezing leftovers.

Ingredients:

  • 1 cup dry green lentils

  • 2 medium sweet potatoes, peeled and diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 6 cups vegetable broth

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper to taste

Instructions:

  1. Combine Ingredients
    Add lentils, sweet potatoes, carrots, celery, onion, garlic, cumin, smoked paprika, salt, and pepper to the crockpot. Pour in the vegetable broth.

  2. Cook
    Cook on low for 6-8 hours or high for 4-5 hours, until the lentils and vegetables are tender.

  3. Serve
    Stir, adjust seasoning, and serve hot with crusty bread.
