Fruit and Yogurt Parfaits

Fruit and Yogurt Parfaits

Servings: 4
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients:

  • 2 cups plain or vanilla Greek yogurt

  • 2 cups mixed fresh fruit (e.g., berries, diced mango, kiwi, banana, or any favorite fruits)

  • 1 cup granola

  • 2 tablespoons honey or maple syrup (optional, for sweetness)

  • 1 teaspoon vanilla extract (if using plain yogurt)

  • Fresh mint leaves for garnish (optional)

Instructions:

  1. Prepare the Yogurt: If you're using plain yogurt and prefer a sweeter taste, mix in the vanilla extract and honey or maple syrup. Stir well to combine.

  2. Layer the Parfait: In clear glasses or bowls, start by spooning a layer of yogurt at the bottom (about 1/4 cup).

  3. Add Fruit: On top of the yogurt, add a layer of mixed fruit.

  4. Add Granola: Sprinkle a layer of granola over the fruit.

  5. Repeat Layers: Continue layering yogurt, fruit, and granola until you reach the top of the glass. You should have at least two layers of each ingredient.

  6. Finish and Garnish: Top the parfaits with a final sprinkle of granola and a few pieces of fruit. Garnish with fresh mint leaves if desired.

  7. Serve: Serve immediately, or cover and refrigerate if preparing ahead of time.

Tips:

  • Yogurt Choice: Greek yogurt is thicker and creamier, but you can use any type of yogurt you prefer.

  • Fruit Options: Fresh berries like strawberries, blueberries, and raspberries work wonderfully, but feel free to use whatever fruit is in season.

  • Make-Ahead Option: If making ahead, layer the yogurt and fruit, but add the granola just before serving to keep it crunchy.

  • Dietary Options: For a dairy-free version, use coconut or almond milk yogurt, and gluten-free granola if needed.

These Fruit and Yogurt Parfaits are a healthy, refreshing, and visually appealing breakfast or snack. They’re easy to customize with different fruits, and they’re perfect for a quick, nutritious treat that everyone will love!
