Pumpkin French Toast

Ingredients:

  • 4 large eggs

  • ½ cup pumpkin puree (not pumpkin pie filling)

  • ¾ cup milk (or your preferred milk)

  • 1 tbsp brown sugar

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp ground ginger

  • Pinch of salt

  • 8 slices of bread (thick-cut like brioche or challah works best)

  • Butter (for cooking)

  • Maple syrup, powdered sugar, or whipped cream (for serving)

    Instructions:

    1. Prepare the Pumpkin Custard Mixture:

    • In a large mixing bowl, whisk together the eggs, pumpkin puree, milk, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt until smooth and well combined.

    2. Dip the Bread:

    • Heat a non-stick skillet or griddle over medium heat and add a little butter (about ½ tbsp).

    • Take one slice of bread and dip it into the pumpkin mixture. Make sure each side of the bread is well-coated, but avoid soaking it for too long, as this can make it soggy.

    3. Cook the French Toast:

    • Place the coated bread on the hot skillet and cook for 2-3 minutes on each side, or until the bread is golden brown and slightly crisp.

    • Repeat the process with the remaining bread slices, adding more butter to the skillet as needed.

    4. Serve:

    • Once all the French toast is cooked, transfer it to a serving plate.
