Ingredients:
4 large eggs
½ cup pumpkin puree (not pumpkin pie filling)
¾ cup milk (or your preferred milk)
1 tbsp brown sugar
1 tsp vanilla extract
1 tsp cinnamon
½ tsp ground nutmeg
¼ tsp ground ginger
Pinch of salt
8 slices of bread (thick-cut like brioche or challah works best)
Butter (for cooking)
Maple syrup, powdered sugar, or whipped cream (for serving)
Instructions:
1. Prepare the Pumpkin Custard Mixture:
In a large mixing bowl, whisk together the eggs, pumpkin puree, milk, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt until smooth and well combined.
2. Dip the Bread:
Heat a non-stick skillet or griddle over medium heat and add a little butter (about ½ tbsp).
Take one slice of bread and dip it into the pumpkin mixture. Make sure each side of the bread is well-coated, but avoid soaking it for too long, as this can make it soggy.
3. Cook the French Toast:
Place the coated bread on the hot skillet and cook for 2-3 minutes on each side, or until the bread is golden brown and slightly crisp.
Repeat the process with the remaining bread slices, adding more butter to the skillet as needed.
4. Serve:
Once all the French toast is cooked, transfer it to a serving plate.
Dust with powdered sugar, drizzle with maple syrup, or add a dollop of whipped cream for extra indulgence.
