Total Time: 20 minutes

Ingredients:

  • 4 small whole wheat pitas

  • 1 cup marinara or pizza sauce

  • 1 ½ cups shredded mozzarella cheese

  • 1 cup assorted toppings (pepperoni, sliced olives, diced bell peppers, mushrooms, etc.)

  • 1 teaspoon dried oregano (optional)

  • Fresh basil leaves (optional, for garnish)

  • Olive oil spray or drizzle

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Pitas: Place the pita bread on a baking sheet. Lightly spray or drizzle olive oil on each pita for added crispiness.

  3. Spread the Sauce: Evenly spread about 2-3 tablespoons of marinara or pizza sauce over each pita, leaving a small border around the edges.

  4. Add Cheese: Sprinkle about 1/4 cup of shredded mozzarella cheese over the sauce on each pita.

  5. Add Toppings: Let the kids get creative by adding their favorite toppings! You can mix and match to create a variety of mini pizzas. Consider using toppings like pepperoni, sliced olives, diced bell peppers, mushrooms, or even pineapple chunks.

  6. Season: If desired, sprinkle a pinch of dried oregano over each pita for extra flavor.

  7. Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly and the edges of the pita are golden brown.

  8. Garnish and Serve: Remove the pizzas from the oven and let them cool slightly. Garnish with fresh basil leaves if desired. Slice each mini pizza into quarters and serve warm.

Tips:

  • Customization: Offer a variety of toppings so each child can create their personalized mini pizza.

  • Dipping Sauce: Serve with a side of marinara sauce or ranch for dipping.

  • Healthier Option: Opt for whole wheat pitas and load up on veggies for a more nutritious twist.

Enjoy these Mini Pita Pizzas as a fun, quick, and delicious meal that the entire family can enjoy together!
